They're marked on Google Maps, not hard to find. They link up with lots of others, so you could walk to the south side of the island, if wanted.

If you don't know what you're doing, avoid anything that is near the waterfalls. There are some really steep and scrambley routes near the waterfalls.

If you like to climb mountains, there is a route up to Ngong Ping right below the cable car. Or if you prefer a more horizontal path, you can hike all the way to Tai O. It will take at least several hours, but it is worth it. Go pass Yat Tung Estate on Yu Tung Road until you see a side road that go pass a inlet of Tung Chung Bay. This is the start of the trail. The trail will lead pass Tung Chung Hau Wong Temple and a playground, skirting the Bay. Eventually, you will encounter a side trail that goes uphill, this is the route up to Ngong Ping, literally below the Cable Car. If you elect to continue on the original trail, it will take you to Tai O, passing Sha Lo Wan and Sham Wat Wan. There are some old growth forests in the area, which is rare in HK, since most forests in the city are planted post-war (except maybe the Fengshui Woods behind old villages in New Territories).

Or in the opposite direction you can hike to Mui Wo, again this will take several hours. Go pass the Sinopec station off Man Tung Road behind Carribean Coast. There you will encounter a concrete path that hugs the shoreline next to the MTR line. Keep going until you encounter a tunnel that goes below the railway and the North Lantau Expressway, and the trail to Mui Wo will start there, passing Tai O Wan and then uphill before descending again to Mui Wo.
