For the issue with iTunes not opening automatically when your iPhone is connected - here you go:

    http://support.apple.com/kb/TS3927?v...S&locale=en_US

For the update issue - try updating your iTunes to the latest version first. Then give it a go.

For the voice control - not too sure about that - you might want to check this apple discussion thread :

so I have updated to itunes 1122, latest version and the problem still persists

"... have tried to restore iphone but can.t go through the last step.
iphone software update server can not be reached, somehow I got the feeling that an evil force always interrupts my wifi connection when it comes to the point to connect to update server"

have tried through itunes and on iphone using strong and reliable WIFI connection

from your hyperlink "The hosts file may also be blocking the iTunes Store.

Open the Terminal utility located in Applications > Utilities.
When Terminal opens, open the hosts file by typing entering the following command and pressing Enter:
    sudo nano /private/etc/hosts"

I am sorry, but I can't find "Applications" or "Utilities", are that icons in the itunes menu or where to look for it ?

Is the time and date on your Pc set correctly? This is also a common mistake, as each time your PC connects to any of the Apple servers, it checks this, and if it's out of sync you'll get lots of connection issues.
