3HK e-sim or a 65gb prepaid sim in sham shui po should be ok and no hassle.
Have you tried it in mainland China recently?

I am active user of 3HK SIM plan. Works ok. Definitely lower as compare to the local mainland china SIM data plan.

    MullvadVPN

ExpressVPN, NordVPN, PrivateInternetAccess (PIA), and Surfshark WILL NOT RELIABLY WORK
(if at all) in China, regardless of what their advertising or support tells you.
The current consensus for working VPNs working in China seems to be Astrill VPN, Mullvad VPN, and LetsVPN.
I was a loyal subscriber with expressvpn for a very long time and in the last 12 months of a subscription I started having serious problems. Some websites were blocked when noticing a VPN was being used. I had to check the IP address every time I booted up my PC. I normally had a Sydney server connected and did a IP check and it indicated Singapore. I use Chrome for emails and Firefox for all other browsing.
Both Chrome and Firefox were being blocked from accessing many times. expressvpn live chat support are nice people but they only provided information they got from expressvpn.
I tried NordVPN and was having problems with servers taking a long time to change and causing problems with Mozilla Firefox browser extensions.
NordVPN also takes a long time to change servers and sometimes the servers are changed by Nord.
I searched for an alternative and saw information about MullvadVPN. They are based in Sweden with extreme Integrity and Transparency on their website. If you're interested check their website. I highly recommend MullvadVPN. I can easily access previous blocked websites now. 5 euros a month no discount for 12 months or 24 months etc.
    I recently renewed my subscription.
MullvadVPN doesn't advertise on websites or YouTube.
They don't require your email address, your name, your bank card details etc.

    1. install V2RayNg on your device
    2. Go to https://sshocean.com/trojanvpn/hongkong - preferably on your PC (please add a link function here!)
    3. Click `Create`
    4. Enter any username
    5. Add a bug host, i.e. ipfabric.io (because it's in Cloudflare, but any URL will do)
    6. Click `Create Account`
    7. Ignore all the date, just click the QR (both)
    8. in V2Ray click + > Import from QR > [--] (for both)
    9. Now you have two protocols that will work for a week.

I suggest you set also V2Ray > Settings > Per app proxy - and click all apps where you want a VPN. For Things like Alipay, WeChat, Didi you do NOT want a VPN. If you have two browsers you can have one for VPN and not.
