What apps (or sites) do you use to watch videos/tv, and before some smartass says "YouTube" I'm talking more about movies/news/tv - in english, sort of like hulu (anybody get this working via proxy or whatever on iphone?) or MobiTV - this latter one works sometimes (supposedly US only like hulu)

YouTube has movie rentals I think they're in limited access currently, look for news on Google TV devices such as the one by Logitech,

make sure you JB and get the 3G unrestricter, as many websites downgrade quality of videos (esp youtube) over 3G to an unwatchable quality. 3G unrestricter tricks the sites to think you are on wifi.
also, there is a hack in cydia for tricking sites that you are not on mobile phone.....which will help with sites like hulu's idiotic restrictions.
furthermore....hulu will be releasing a HTML5 version of site very soon, which will make things play nicely with a VPN connection running on iphone (which i do anyways - recommended vyprVPN)
other then all of that.....i dont watch too much TV on my iphone :P

If I want to watch anything, I download it and copy it across to my iPhone. Much better quality and less hassle.
