Is it possible to make octopus payments in the MTR using the Apple Watch? I basically want to be able to seamlessly pass through the gate just by tapping the watch to the reader

You cannot use idevices to make contactless octopus payments at MTR or stores. You can buy a customized octopus like key chains or even watches...
