So I decided to go check out the issues myself. Yes I know the store demo models are unpatched version but still curious.
So I tried out a few things and they were a bit jerky. I recorded the video below showing what it's like to pinch zoom in Google photos. The jerky responsiveness is massive. You can't miss it. I tried the same on my phone and a few other phones there and nothing like this.
I don't see how they could have missed this in testing. I really believe it is a hardware issues that they are fixing with software. But what I saw made me pass on the FE. Some say it's better after patch, some say no. That's not good enough for me and not worth finding out. Really too bad as it checked all the boxes.

For what its worth I ended up pre-ordering the Galaxy S21 with 256GB RAM yesterday.
Price of phone was HKD5983 and I get the following with it:
