After reading here, the two things I'm going to try are:

1. registering my HKID - I opened the account before I had it.
2. try again at the beginning of next month - due to others mentioning that HSBC want people to have had their account or been in Hong Kong for at least 3 months.

(*yes I could go with another bank, but I got lured in for my bank account and would prefer to keep my credit card with my account. I might re-evaluate this once I'm more settled)
HSBC is know as the most difficult bank to get credit from. Oddly, it's easier with Hang Seng who are owned by HSBC.
