You don't even need proof of address in Hong Kong. Proof of address anywhere is fine.

Pretty easy. Go to HSBC branch. Take ID and proof of address. Open account.

Can you open account if you don't have employment?

If i don't have a job when i arrive in HK - i plan to look for one when there - i can still open an account right? Or do i need proof of employment?

You don't need to have a job or be HK resident to open a bank account here. To open a SmartVintage HSBC account, all you need is your passport, proof of address in your home country (same country who issued your passport), and HK$10,000 minimum deposit I believe.
