I passed HSBC and saw they were offering 10% on selected currencies, not sure of the details or which currencies.

I just checked on HSBC website. Indeed, they offer 10-12% on selected currencies.

There are banks in HK that give more than 3.75% also for 12 months

Here's one that does 4% on USD. Deposit Interest Rates – UCO Bank, Hong Kong

And another doing 4.1% on USD and 3.85% on HKD. https://hk.statebank/deposit-interest-rates

All covered under the deposit protection scheme.

Indian and other non-local banks will offer higher rates. Worth checking them out if you are chasing yield. Someone somewhere mentioned Qatar offering 4% (don't remember if this was a bond or FD..)

But make sure those banks are financially sound though (and not pulling out of HK any time soon), I would say.
