We go to American Peking in Wanchai for crispy duck - although its not like the UK style where its dry - we just ensure they cut plenty of meat with the crispy skin as Chinese style tends to be just crispy skin and thin layer of meat.
Peking Garden at Pacific Place (quite pricey) also does Peking Duck - again you need to request for crispy skin on meat or meat on its own.
