Wink Requesting fancy a** restaurant recommendations

Hi there, I really want to take my mom out to a nice restaurant next week. We've already tried a lot of the buffets like the verandah, the grand, JW, the market, etc. But since my mom doesn't actually eat that much I thought it would be a nice change to bring her to one of those fancy restaurants - you know, the ones with like 4 to 6 courses and each course has a tiny amount of food on the plate.
My budget would be max 2000HKD for 2 people. I could stretch for 2500 if the food is absolutely mind blowing.
If anyone can recommend me a good place with good food it would be very much appreciated, thanks.

Absolutely. VEA restaurant in Central. $1500+10%. Add $700-800 for the cocktail / wine pairing. Do the cocktail pairing!! This is the best restaurant I've been too and I say that comparing Ritz Carlton and Robuchon. Excellent value here too--reservations required.

take a look at this website. Many of the restaurant review listed are more or less spot on:

It may not be fancy enough for you, but Wooloomooloo Prime in TST has a great view at night if you can get a table by the window.

I really enjoyed L'Atelier de Joël Robuchon, there's a fixed menu that should be within you price range.

Had a good meal here... a bit spicy and could not come to terms with a "deconstructed gado gado salad"
