    The inputs are outragously overpriced but its possible to make this. Can't get the supermarket/ Costco style roasted chicken though. Cheese or ground beef enchiladas also an easier good substitute.

    Down our road is a cruise ship senior chef obviously not working at the moment. He delivers food at very low prices so we are doing less cooking than we used to do

    Hainan chicken rice.

    I said to the family - I'm defrosting a whole chicken, what do you want? Roast chicken and vegetables or Hainan chicken? It was unanimous. And I'm a little relieved because secretly I wanted it too.

    My sauce is more Thai style, so I use the soybean paste in there. The colour is way different to what you get in Singapore, for example, but no issues here.

    I've been craving this as well. Probably make it this week.
