Do you know any new and cool restaurants in HK lately. The class / style kinda comparable to Hutong, Zuma..... planning to have a nice dinner next weekend.

There's a great place in Sheung Wan called Good Happy Delicious Kitchen. Definitely a place to check out.
Not sure a place with a name like "Good Happy Delicious Kitchen" is what the OP had in mind (or were you just winding us up?).
Hutong = showy view, must-see place for tourists, with over-priced god-awful food. You cannot pay me to eat at Hutong again.
Zuma = showy decor, place to see and be seen, with over-priced mediocre food. I don't mind their drinks (at the bar) though.
If that's what floats your boat, you can always count on the old favourites such as Va Bene in LKF (new in the sense of renovated not so long ago) and Harlans in the IFC. Paid through my nose and came out fuming because the food was crap, especially in light of the price tags. Or Spasso in Harbour City. All these places should fit your definition of "new(ish) and cool" though.
Have you tried Bo Innovation in Wanchai near J residence, that is always a good place to try something a bit different.... fusion asian food. Top notch
according to HK's local food/resturant forum, hu tong is below average, priced at the high mid end market
