I suggest Sydney for starters. There's a mix of things to do & see.
Sydney Zoo is supposed to be pretty good - with kangaroos and koalas for the kids to see.
And if you get homesick there's a sort of Chinatown.
Alternatively, the Gold Coast in Queensland is a more resort type place and if the kids haven't been to Ocean Park, they can go to Sea World.
By the way, there may be special visa requirements.

The Gold Coast is a concrete jungle of beach hotels. Not sure if you and your family will enjoy that. Between Brisbane and the Gold Coast are a couple of theme parks - Warner Bros is one of them where you will find rides similar to Universal Studios in Los Angeles. Brisbane has a Chinatown too and a casino if you feel that way inclined. If you feel like taking to the roads then Brisbane to the Sunshine Coast is around 2-3 hours and is absolutely stunning.
A bit OT but... If you are using miles and you want to fly during CNY holidays, I suggest you book your tickets NOW. I tried to get my free tickets to Japan for the x'mas holidays and all the days I wanted are fully booked.
If you want to go to Gold Coast do you fly to Brisbane? How far of a drive is it between Brisbane and Gold Coast? I have a US and HK drivers license, so would I be able to rent a car?
Yes you fly to Brisbane. The drive to the Gold Coast is around 1 hour. Not sure about the acceptability of US and HK driving licences.
Nevermind anyway. It looks like you can't fly anywhere on miles around CNY. I checked, Cairns, Brisbane, Sydney, Melbourne, and Auckland NZ. Really ticks me off. I got 350,000 miles I can't use.
HK license is fine for car rental. You can pick up at the airport, or book through HK first.
