I highly recommend the Red Lantern Hostel in Xin Jie Kou. Stayed there a few weeks ago - had never been to China before and was travelling alone. I had a fantastic time. It's family-run and has a great environment. Nice restaurant and common area that's good for meeting people, and very safe.
They have a baby, family members and a cat all running around, and the staff is friendly and extremely helpful. I met some really interesting people who later came to HK and we all talked about how it was a great place to stay. You can take a look at it on hostelworld.com - it was voted #1.

There is a good one nestled around Houhai called Backpackers'. It's in a hutong called Nan3 Luo3gu3 Xiang4 with lots of little cafes sprinkled around. Close to the Bell and Clock Towers. Looks clean and is in a great location. Cheers!
There's a lovely traditional courtyard hotel called Lu Song Yuan in a hutong about 1km east of the Forbidden City and south of the National Art Museum. V central. Not easy to find but v popular with foreigners--a known gem! Google Lu Song Yuan or see:

Both are very nice, with Templeside being slightly closer to Tiananmen and downtown, but with Red Lantern being the much more interesting one architecturally and in terms of atmosphere and the people you meet!
Both locations have 2 different buildings... the original templeside rooms lead out into a central courtyard. The new templeside building rooms lead out into a outdoor corridor (and has a great view of bei ta si).
Red Lantern's original building (those rooms without ensuites) is pretty neat... the courtyard is covered and the beer is cheap!
The new building seems to be a lot livelier though, as there are more rooms in the complex so it's typically more livelier at night (but never too loud to tolerate)
