Flying from Shenzen and/or Macau using airasia isn't that much cheaper, and too much of a hassle. Don't forget to factor in the fares to and fro Hong Kong.
Go to most of the travel agents they can quote you a price for packages, ranging from $1700 upwards (depending on the hotel you choose), includes air fare and accommodation. Problem is, most of these packages need 2 to travel. If you go alone, there is a ridiculous premium!

They have a wide range of cheap tickets for various airlines and hotel packages for one person as well. Cheapest they quoted was Hong Kong Airways $820 return + taxes, but it was full. If you book early, maybe you can still get the tickets.
There is no difference in price if you take the hotel separately. I'll be booking my hotels online, which gives you a better rate, try

Downside is they need $500 deposit booking when you go there. Its refundable if you don't get the flights that you want, and the money is used to offset the final price. And they only take cash/atm transfer, as they charge a 3% commission on credit cards.

any hotel you get with a package will be more expensive than a room you can find by yourself when you get to bkk.
just take the government bus from the airport to the Kao San road/Ratchadamnoen area. You can find hotels in all ranges on either side of Ratchadamnoen Road and on Kao San Road.
