Although your list contains many interesting things that more visitors should probably do travelling 1/2 way around the world to see a grassy island may be pleasent and cool in a niche way but it doesn't get them queuing.
So taking queuing as the measure for the top attractions (where people queue for something rather than transport to somewhere - Admiralty MTR station would be top of the list) as it shows a relationship between how desirable something is vs how plentiful the supply is.
The top 3 based on queues I would suggest
#1 Peak Tram
#2 Jenny's bakery
#3 Generic European mass produced luxury handbag and clothes shop
#4 Star Ferry
#5 Ding Ding
no particular order:
view of victoria harbor on star ferry
dragon's back (along the hk island hiking trail)
lamma island
neighborhood near the mid-levels escalator
view from the tram
dessert shops that open till very late
chungking mansion
shopping at sha tin town center (you can buy almost every thing here! so why bother elbowing my way at the super crowded cwb lol)

Don't think I will put this in the top ten, but since most of you mentioned the main sights already, I will offer a side excursion, the Tai O Heritage Hotel. This used to be the old Tai O marine police headquarters. It is a rare example of nicely preserved and rejuvenated historic structure from the colonial era. Overlooking the Pearl River Delta, its a good place to spend your afternoon tea there after visiting the main Tai O village:
