Say I book a flight with an airline because they operate Dreamliner on that route, what if they change the aircraft, can I say no, that's not what I have booked ?
Can I demand to rebook me on the next Dreamliner ?

I don't think so, no. You might be able to try if the product you booked is vastly different, like new business class vs old etc.
happens all the time CX announce it as : 'due to aircraft rotation'
always creates a problem when people booked PE and then there is no PE only Y on the replaced aircraft

The Conditions may include, but are not restricted to:
Rights of the carrier and limits on the carrier’s liability for delay or failure to perform a service, including schedule changes, substitution of alternative carriers or aircraft and re-routing, and, when required by applicable law, the obligation of the carrier to notify passengers of the identity of the operating carrier or substituted aircraft.
you can try calling and asking for a flight change
it is not unheard of to get changed - but as others mentioned - under the COC, there is technically no change allowed
The way the airline thinks about it, the product is a business class service between two locations. Contractually, they could put you in the regional recliner and fly you all the way to Sydney and the only recourse you'd have is false advertising. You might have a shot at a rebooking free of charge on a different date as a goodwill gesture, but even that is questionable if they changed a 787 to a 777 or A340.
Apparently is Qatar also famous for changing equipment often:
