I work at HKU and want to know if there is a quick way to get to Hung Hom MRT (or even anywhere on the line to Luo Wu?)....any info would be much appreciated!

Bus 103 is the direct way, but quite a bit slower than taking a taxi, for example.
Otherwise it's take one of the many buses from HKU to Central MTR (which bus/minibus depending on exactly where in HKU you start) then red line to Prince Edward, change to the green line to Kowloon Tong, then to the East Rail to LoWu.
Central to Kowloon Tong is only 19 minutes on the MTR, so that would be quicker overall than the direct bus to Hung Hom (which will take about 45-50 minutes, or more in heavy traffic).

There's also 10 Green minibus passing HKU to Lockhart Road at Canal, then a red minibus from Canal to Shueng Shui ER Station virtually non-stop...
If the Government hadn't shelved the Northern Link from West Rail to LMC & Lowu then it would be fast and easy. Do you need to go to Shenzhen? What about a cross border bus?
Bus #103 is too slow. And if you're unlucky, you'll get stuck in Wanchai near Canal Road, or in the XHT. Don't risk that if you lack time!
Rather, hop on bus #970 or #970X (which is 5-10 minutes faster by skipping Sai Ying Poon) to cross the harbour via the WHT. Then, get off at Austin MTR Station (2nd stop after the WHT) and change to MTR. 2 Stations later, you're at Hung Hom station. If you're going to Lo Wu, just change to the train at the opposite platform at Hung Hom. Total journey time (excluding waiting) for taking 970 would be less than 30 min. Add a max. 10min waiting time for 970, 6 min at Austin station and 8 min. walking time from bus-stop to the train platforms at Austin.
As for the bus stops of 970/970X, leave HKU via the footbridge (via G/F Haking Wong Building) at West Gate and continue to Yum Pak Building. You'll need to go under the flyover over Hill Road. After passing Yum Pak building, you'll see the bus-stop. Alternatively, you can get there by going to Podium, 4/F Haking Wong Building, then get to the two lifts leading to Composite Building or the car parks down there. Go down to the floor "CP1" with those lifts. Exiting the Composite Building on that floor (which is also the car exit), walk along the flyover heading west. When you decend along the flyover, you'll be making a 270 degree turn and the 970/970X stop is just down there.
If you're closer to the East Gate, then leave HKU via East Gate, and get down hill via the tiny Hing Hon Road until you reach Pokfulam Road. Then, walk up a little bit (<50m) along Pokfulam Road until the traffic lights, and use the traffic lights to cross the road. There, you'll find a bus stop for 970 (but not 970X, as 970X skips this place). The next stop is outside the Post Office, some 150m downwards along Pokfulam Road.
