Are there any clubs or activities or people from Taiwan who do things here?

Yes, there are many Taiwanese in HK and have a group, too. Married Taiwanese wives are a portion of the group.

You've misread the Taiwan visa application form. You don't need to include that information. Suggest you re-read the application form.
