    Not joining the new company after signing the offer letter

    When hopping jobs, it is usual to have multiple offers and hence for a few companies you will pull back even after the accepting the offer. How strict is the contract in HK? Any legal bindings that we need to be aware of?

    PS: I am not talking about ditching the company at the very last when joining date is near. That is unethical as well. Given enough notice, would companies come after you for not joining?

    Your probation period probably has 0 days notice for the first few weeks so legally you're almost certainly in the clear. Check your contract.

    Even this is not uncommon in HK, I have come across this multiple times when hiring. Its not worth the effort for the company to do anything about it. Obviously you burned all bridges with that company and the people involved in that hiring.
