This forum is great! Thanks guys!!!
So to summarize (so I can quickly read this later, or for anyone else asking the same question):

-stay away from TST jewelers (same problem as with electronics/camera shops I guess, where they trick just about any foreigner)
-Tiffanny's in the International Finance Centre mall is good (but pricey)
-Jeweler in Marco Polo hotel, Tsim Sha Tsui is recommended because they make their own stuff and thus brings the price down
-Jewelers in Mong Kong area could be risky as you need to haggle and it's a risk when you don't know the value beforehand (the two chains below are an exception to this)
-The "chow sang sang" chain is reputable
-The "chow tai fook" chain is also reputable
-Jewelers in Sha Tin are recommended
-Look for "No fakes" sign at jewelers

    a) Should every reputable jeweler have a "no fake" sign in their windows and/or door, or just reputable jewelers in "suspicious" neighbourhoods where fakes are common?

    b) Do those two chains have fixed prices, or do I need to haggle? (like Phooey said, the same applies to me; I don't know what jewelry is worth)

    c) Jaykay; where in Sha Tin are those jewelers located, and are you talking about Sha Tin jewelers in general, or one or two particular shops?

    d) How long time does it take to engrave a couple of rings?
We haven't decided on an exact date for the wedding yet, but the general idea is to have it about a week after we arrive. That would (hopefully) give us time to work out all the details we can't do from here. Especially with the help of you guys giving us advice on where to buy stuff and so on. Truly appreciated!!
    :wave

I'd love to get a real bargain AND rings that we're happy with.
But I completely agree with Ayukobaby that these are important rings and that we should get something we're really happy with, but we have to get something within our budget as this trip is going to become expensive enough as it is with an almost 1 month stay and seeing/doing as much as possible during that time as well as the wedding (fortunately we're getting away easily with that as we won't have any reception etc. -it's only the two of us, getting married and having our honeymoon in one go).
    I think it'll be a blast!

theres a bunch of jewellers in the shopping centre in sha tin right above the kcr on the ground floor all pretty close together so you can take a look and compare prices.

prices you should be able to haggle but don't expect to get much more than 10% off. Oh and always ask if they do deals if you pay by credit card as if you have for example an hsbc card you might be able to get a good deal.

    b) I managed to haggle in Chow Tai Fook for the engagement ring, didn't know what it was worth but kept being annoying until the price came down

    d) we're getting the wedding rings from Tiffany engraved, they said it would take 2 weeks, but I'm sure they could manage to do it faster if you asked them.

    I'm sure you'll have a blast too!

pacman, we got the rings in Shatin Plaza which is linked to New Town Plaza. I will try and find out the name of the jewellers for you. They were extremely good and we were really pleased with both engagement and wedding rings.

    Congratulations!

Yes 2006 is a very very good year to get married according to the chinese calendar. There are some days better than other days by matching the new couples birthday, their parents birthday etc. I have already been to several weddings in this year. And I know I will attend more weddings at the end of 2006 til Jan/Feb 2007 (still the same year in the chinese calendar).

If u plan to have a wedding party, i would suggest u to check the availability of venues asap. Coz most ballrooms of hotels/ chinese restaurants are fully booked on the good days one year in advance!!!

    Thanks!
No wedding party. It'll just be the two of us although we do want a nice dinner after the actual church wedding. We haven't decided what kind of dinner, but an idea that came to mind was to have something a little different from back home, and being in HK, perhaps some traditional HK wedding dinner if possible.
Any suggestions on where to go for that and how much it would cost? Are there special wedding dinners that HK people have, or dishes that you can get at any HK restaurant?
Will it be hard to get a table (beginning of August)?

I've been given several links to jewelers in HK, but unfortunately none of them have any prices displayed.

Just to get an idea so we can compare prices with what they cost here, how much would for example a couple of simple wedding rings as shown below, 4mm wide cost when made of platinum and the same ring made of titanium cost?
Someone suggested we get our names translated into Chinese and engraved into the rings. A great idea!
