    But those restaurants don't server authentic Beijing, Sichuan and Shanghai cuisines. Don't be fooled by their names. Most Chinese restaurant in the US serve American Chinese food with Cantonese flavor. Lots of them are actually owned by Fujianese though. You can find some authentic Chinese food in Bay area, Flushing and other areas with a big population of new Chinese immigrants.

    This short article cannot summarize the diversities of the Chinese food. Among the four branches in it, Cantonese is my least favorite. Shandong cuisine is the Royal dish in Ming and Qing dynasty. Yet it is the least popular now in China.

    Yes, I like Shandong food, too. I think the article was aimed at tourists, so probably mentions the foods they're mostly likely to encounter, broadly. It would be harder to find Shandong food.

    One thing about ordering Cantonese food I've encountered over the years: The freshest stuff is not on the menus. You have to ask what is available and know how to order. Another stumbling block is Chinese restaurants steering Westerners to food they think they'll like. My husband, a white guy who loves to cook and eat, rants about how he tries to order authentic Chinese food and is usually steered away. A Jewish friend of mine had the same problem, after being introduced to some authentic dishes in NY. He tried ordering them on his own and said the waiters insisted, "No, you will not like it." I think restaurants follow patterns and try to avoid a displeased customer. My husband rants, because he says Westerners are missing the best food.

    My favorite of Cantonese food is dim sum.
