Local sugar producer (not sure if that's the right word since I doubt they actually produce sugar per se) Taikoo has soft brown sugar for baking. I think it's packaged in a resealable plastic bag (like a Ziploc). Should be available in most supermarkets, although it would help if you were at a bigger one or one in a traditional 'expat' area e.g Taste in Kln Tong, ThreeSixty at the Landmark, Wellcome in Repulse Bay.

I just bought a bag of Whitworth's light brown cane sugar at Great supermarket in Pacific Place today. It's just like the moist soft brown sugar I bought in the US.

Often brown sugar is only sold in solid blocks, avoid as its a PITA to use for cooking. However Wellcome, Taste, and Great all have loose brown sugar. Taikoo also sell red sugar as a varient.

Taikoo is based in Taikoo Shing on Hong Kong island, so you can find many different varieties of sugar here.
