Knife sharpening service

    Well in this case I am not taking any chances.... I will dress first, maybe with a codpiece for extra care! :-)

    Excellent choice, @rickflies.
    May I offer some top tips for whetstone use?
    1. Use heaps of water. Soak the stone for an hour first, and lay it on a towel to catch the extra you pour on.
    2. Practice first on a shitty IKEA knife.
    3. Do one side of the knife first, back and forth, then lift the knife clear of the stone and change to the other side. Swapping from left to right to left side will put a lovely, genital-friendly roll on the cutting edge of the knife.
    4. Work slowly, test often. Test by scraping the back of your thumb nail
    5. Hone to finish. The unglazed rim on the base of a coffee cup makes an excellent hone.
    6. As you get closer to Stanley-knife-sharp, use increasingly light pressure - on the stone and the hone.
    You'll be cutting translucent, micron-thick slices of the ripest tomatoes in no time.

    There are plenty of hardware shops that will sell you a very fine Japanese natural whetstone for under $50. I bought a cracker last week for $35. Get on YouTube, clear a space on the coffee table and get to it. In my opinion of you can't sharpen your own knives, you should be eating and cooking with a spork. And the possibly lofty price doesn't release you from your human responsibility either. They are all just beautiful pieces of steel. Fear not, and maybe crack a big life-stiffy when you get it right.     Shanghai street is good for sharpening stones. There are shops that specialise in knives so may offer sharpening. I occasionally see an itinerant knife sharpening man outside Tai Po market- the old-fashioned type who sharpens choppers etc. Unfortunately I don't have my knives on me to give him.

    I just use one of these. About ten seconds every couple of times I use a knife, and I really could not be arsed with a flat stone and worrying about maintaining constant angles.

    I've obsessed about sharpening in the past, and whilst it's kind of satisfying, I have much better things to be doing with my time.

    Go to Shanghai St. Kitchenware District, ask in the knife shops for quotes, bring the knife with you, try not to feverishly wave it around in the MTR. stations. They may require a 24 hour wait before collection.

    I had my tailor's shears sharpened and I presume, oiled. Marvelous job, they even let me test their efforts on scrap cloth. If they give you a token, don't lose it, you will need it to collect your knives. Also, pay upfront when giving them your knife for sharpening. Ask around.
