    What is "gravy beef"? Not a term I have heard before.

    Gravy beef is boned shin, it's used a lot in casseroles slow cooked to melt the fat away, making it crumbly ( cooked in a gravy ) as it is quite a fatty/stringy meat and a very cheap cut, which is why dog owners buy it too.

    Gravy beef with the shin bone still intact is called Osso Bucco.

    Thanks. Knowledge added to. Dad was a butcher so I was surprised I didn't know the term.
