Dunno about HK side, but most wet markets in the NT with an old fashioned grocery stall, you know selling the preserved cabbage and preserved tofu etc usually does noodles and will have them. But you need to go no later than mid afternoon because they usually sell out quick.
Btw, tip for frying ho fun, stick it exposed in the fridge overnight to dry it out a bit. Then fry the ho fun with absolutely ready to flame hot oil - cook the meat and veg separately and add in to the ho fun. Otherwise you might end up with a gooey liquid oil infested plate of something.

In and around most wet markets will stock fresh hoi fun noodles. usually also sells fresh wontons/dumpings and Chinese buns.

There is a master chef's advice if even I've seen one!! Also add the soy sauce at the last moment...

Also saw them late at night at the Wellcome, but that was in Ma On Shan, so guess doesn't help you much!
Try Central Graham Street market, Kennedy Town lower half of Smithfield Rd by Manhattan Heights, Causeway Bay Market by Canal Street. These places sell them.
