If you like a bit of nature, go visit Tung Peng Chau... Quite nice and hard to believe places like that exist in HK
Make sure you take photos of all the price tags. It'll make you happy.
It may not be the conventional - CUHK campus.
Nothing much. I think you're supposed to go to Stanley.
Also it's an experience heading down to China (anywhere) as it'll make you appreciate where you'll be heading to.

Catch the ferry to Discovery Bay and drink in the plaza.
Did you live your life around LKF, probably most talked about area in HK.
Wetlands park in Tin Shui Wai? While there, try the seafood near by in Lau Fao Shan?
Do some random acts of kindness =)
If you end up looking around the NT then go to 10,000 Buddhas in Sha Tin!
Tai o is another great place to go and see, maybe see a pink dolphin.
Kalwoon walled city park is worth a look, interesting history lesson. If you go there make sure you try Islam goods while you are there, yum!

I'm gonna leave HK after a few months too...
