I thought the Italians threw away too many points in the final set by serving into the net, effectively ruining any chances of taking a second set off the Chinese.

Agreed. The Italians committed too many errors. The Chinese were a little unstable in the 3rd set which allowed the Italians to recover. But the Chinese spikes and blocks were too strong for the Italians. The no.2 player for China, Zhu Ting, was especially good.
