Hi - im looking for a handyman who doesnt charge a fortune. I have a basic job of putting a jewelry cabinet together and the quotes so far are $500 which is almost what i paid for the cabinet

Handymen are expensive and charge 1k+ for full day. Have a look at the app starting with callfxxxx and see if someone will do it for a price you have in mind. Better yet is to have the shop where you bought it from to install e.g. ikea charges only 150 for installation.

Some new service called SpotHelp launched in hk a while ago, they do this kind of thing, you can try them. But I think at minimum anyone will charge you $300 for it, simply because it will cost them 1 hour+ just in coming and going time, maybe 30-60 mins to make it, and maybe also need some tools.
