Although the Olympic equestrian events were held in Hong Kong (for quarantine purposes), the place is not much for the sport beyond horse racing. You will not find a dressage-specific school in Hong Kong.
There are most of the riding establishments in Hong Kong:

There is also one more public riding school in Lei Yun Mun, run by the HK Jockey Club like the Pokfulam and Tuen Mun ones in the link above.
Plus Beas River Country Club, also run by the Jockey Club for its members. This was where the cross-country section of the 3-day event was held.
BTW, the horses at the Jockey Club establishments are all ex-racehorses and are retrained for the schools.
