Does anyone know what I need to do to bring him into Hong Kong from the US?

Start by taking a look at the SFCD site at: AFCD Import of Dogs and Cats
You'd need to start by applying for the import permit and making sure that your dog has all the vaccinations it needs and is also microchipped. You'll then also need to have a health certificate done within 14 days of travel and some additional paperwork. I'm going through that process right now with my two cats so I'd be happy to answer any questions you may have.
