Just one from either place should suffice. I have properties in UK and HK and recently wrote my will through a solicitor here which will cover all of my assets regardless of where they are.
The advice I have received is the reverse - one will for each jurisdiction where you have major assets. A fundamental issue with wills is determining where you are domiciled - this has major tax implications, and can be complicated if you have property in multiple countries (particularly if none of the countries is your country of birth).
I second PLDM. I had to have 2 wills due to assets in UK and HK. This was on the advice of my UK solicitor.
