Oh man with so many Buddhists here, there should be plenty of Buddhist/vegetarian restaurants!
However since I am not a buddhist, OR a vegetarian, I have no interest of these so can't really recommend any.. lol sorry
There are a fair number of vegetrian restaurants
-- Buddhist fare (places like the Healthy Mess in Wanchai come to mind)
-- Nouveaux veggie places
-- Park N shop etc have mock char siu etc
-- Indian restaurants

Alas, that building in Wanchai is undergoing renovations so Healthy Mess is closed. There are a few other veggie restaurants in Wanchai that are similar further down towards Causeway Bay.Originally Posted by KnowItAll:

OLD STYLE VEGETARIAN: Central Life cafe in SOHO - on the escalator; serves food for vegans.
MEXICAN: Taco Loco, just opposite it - has a really nice veggie burrito, beans & rice, cheese enchiladas & quesadilla delux
INTERNATIONAL: Jaspers, just up the road - has very high quality yummies.
Most INDIAN: - Central Lan kwai Fong - Indian Curry Club have a huge menu and Branto's - Pure Veg in TST has, very famous in HK.
CHINESE/ BUDDHIST - Causeway Bay, in the Food Forum right above Lane Crawford, on the top floor - can't remember the name, but strictly Buddhist Vege, nice, clean & quiet.
***With regards to Chinese food...The local Chinese kitchens recycle their cooking oil (they call it mailion year old) and don't separate cooking surfaces/utensils so you will get chicken/cow/pig/etc juices mixed in your innocent local veggie plate if you are not careful - even in nice hotels it happens.
If you like Indian food you can try woodlands in TST opp to Shngrilla Hotel and also Try Veda at Central..
They're really nice too! It's easy to just go to the same few when there's little time to run around... good recommendations!
