Hi, I know the Art Promotion Office does organise classes regularly, but I am not sure if they have class in Eng or Cantonese. You may check this website:

I go to Chameleon Workshop in Wanchai, which has a great range of art classes, workshops and drop-ins. It is English speaking, and I really recommend it, it's got a nice relaxed atmosphere.

I've been collecting links and wanting to work on some pots for a while, but haven't gotten around to it (in 5 years in HK)!!
