    Is it possible to order meat in special cut ?

    Hi

    I have tried to find about this in my local area without luck; so now I ask you guys if you have any experience about this.
    I am aware of T.C.Deli in Hang Hau Village/Sai Kung but looking for other options.

    Basically my question is whether it is possible to find a shop/market where I can get special cut meat and not just what they have available on the rack.

    I have been after this for several occasions and most recent is a search for a pork roast - cut from the neck of the pig, no bone and a fat/skin layer for crackings
    Could look like this:


    Do you know of any place where I can order a specific cut ? and maybe even decide the origin of the pig (China vs Australia for example) ?

    I would accept if it is considered a special order that I would need to wait some days to get.

    Any information is appreciated, thanks.

    Hmm, never tried that. Does your BBQ have a cover ? If yes, then you only use the burner in one side and keep roast on the other side (with a tray below to catch juices......for gravy )

    I have managed to get cuts like this at my wet market butcher - also with the skin,( minus hairs!!) for crackling.

    It has been Chinese pork and when roasted, been great.

    The guy had a little english but it was done mostly by pointing and hand actions. Could always show them a photo like yours.

    Good luck - well worth the effort.

    Thats good to hear. Any suggestion for a wet market that has a good/big selection ? Normally when I see the wet market stalls I don´t see any "extra" meat from where they would be able to cut to preference.
