We love Saigon on Hennessy Road (Wanchai). Cheap and cheerful, and still the best pho we've ever had in HK. Plus the manager (who speaks perfect English, Chinese and Vietnamese) is super helpful and is always always in a chirpy chatty mood.
Great Pho restaurant on Landale in Wan Chai. Pho 26 I think it is called.

There is a good Pho place on Wellington St. called Nrang Tha or something along those lines. They have another branch on Queen's Road East next to the Hopewell CEntre.

You will see Pho 26 listed down the side. Didn't see a website for them.
They are just off off Johnston on a very short street called Landale.
Maybe I got the name wrong but not the location as that site shows Pho 26 in Sheung Wan - although the menu and prices look the same.

I personally find food at Nga Trang (the place referred to by Brown By Nature above) rather dreadful and not authentic (or even "un-authentically tasty") at all.
