I have a taiwanese gf (dating for 5 years already) and I want her to show my homecountry Belgium. The plan is that we fly to London and have a trip that goes somewhat like this : from London to Cardiff in Wales (where we met) - to Belgium - to Paris - to Holland and then back to London ...
My question is : She's now in Taiwan. Should she apply the Schengen visa in Taiwan or in Hong Kong? Which one would be "easier" and would it take long?

UK isn't a part of the Schengen agreement so she might as well get both Visas in Taiwan.
