Is there anything about living in China that's better than living in Hong Kong?

Never been. I'd still want to be near Hong Kong to be honest.

Have you been to Hainan? I toy with doing a short break there but it doesn't seem worth the risk? I say that in terms of cost... I suspect that if I lived in Zhuhai I'd probably drive down... but then there are actually many beach resorts within a stone's throw of HK if you count China...

Better beaches than around Hong Kong, but it's no Thailand either. Prices for accommodation are very reasonable as they offer many packages from Hong Kong. If you have Asia miles it's easy to redeem them on that route.

Surely the only animals that shouldn't be eaten are the endangered kind such as Donkeys

I prefer using RMB cash instead of cards and smartphone methods in Mainland.

Because I am changing HKD to RMB, better HKD to RMB exchange rate changing cash at exchange shops in HK.
Other payment methods use less favourable exhcange rates and or require additional steps , transfer or deposit to accounts.
