    I second big buddha, stanley and macau - my parents loved those too. We stayed in the westin in macau - laid back with a beach and far away from casinos which suited them fine!

    You mention that while they are youngish 60's, strenuous hiking is out. There is a nice hike along the hills behind East Kowloon, from the top of Jat's Incline to Shatin pass (part of Maclehose Trail Stage 5). You can taxi up Fei Ngo Shan Road to the start (Tate's Cairn), walk along a gently rolling paved road and view all of Kowloon below you and across the harbour to HK Island , then taxi down at Shatin Pass to Wong Tai Sin, grab some dim sum, then visit the Temple complex there...nice way to spend a morn/aft.

    Note tho that part of the route was closed by landslide last year, but just looking up at the area, it seems clear now...but I can't say for sure.
