Question Chinese food explained / DIY manual

I am looking for a Chinese cook book (in English) which can explain ingredients/cooking methods to a total novice in Chinese cooking, and provide a comprehensive collection of recipies... I am in HK so I have access to necessary ingredients (ie no subsitutions are required).

Actually, why don't you spend some time in a local bookshop, such as PAGE ONE to look for Chinese cook books? It's difficult to recommend any cos' there are hundreds of them in town and I bet you must be able to find something satisfactory. You know, sometimes when I run out of ideas of dinners, I just pop in and read some recipes and make a dish!!! FREE OF CHARGE!!

I can recommend 'The Food of China' (Deh-Ta Hsiung and Nina Simonds) published by Murdoch Books, ISBN 174045032-9.

I've been through loads of Chinese cookboks over the years, and this is the best I've come across. It includes lots of basic techniques and useful information as well as recipes.
