My current work sponsored me for a working visa. I have handed in my resignation there and now have a contract with another company. Does this affect my visa? Can my current employer cancel my visa?

Yes, it does affect your current visa - in fact, it negates it.
A work visa is not a visa to work in Hong Kong - it's a visa to work at a particular job in Hong Kong. If you change jobs, you need to apply for a new visa to cover the new job. It may or may not be easier/quicker to get the new visa, but your new company will still have to go through the whole thing of proving that they tried and failed to hire a local and therefore need to hire an expat.
The above may be nonsense - I'm not a lawyer, never mind an immigration lawyer - and it's not like I have a huge amount of personal experience...
For application for working visa to teach English in Hong Kong, does the job need to be Full Time?
A
Yep -- full time .. at a certain salary level (not sure what that is for english teachers).
