How long did the whole process take?
Did you apply as dependent or employment visa?
What documents did they require and what did they ask at interview?
I arrived around 4pm and was finished around 4:45pm. I had an employment visa before but changed to dependent when the company closed. The documents that I provided were the copy of my 1st Working Permit, IRD Payments and statements, Bank Records (during the first time I came to HK, including Credit Card Statements) and the first employment contract.

Also brings you one step closer to a SAR passport if you need / want one.
Can you apply for a SAR Passport immediately after getting PR?

That's not totally true, I got a flexible loan with DBS even if I am not a PR (I applied using my Working Permit). You might want to check them out.. Or maybe I just got lucky..
