Just go through immigration like normal with your existing card.
Everyone is in the same situation as you, as HK has opened its borders after COVID.
Thanks! I guess getting into HK with the old ID card would be okay. My concern is when leaving; it would be 40 days since I arrived and I’d still have the old ID card when leaving at immigration… hoping that they will understand the situation, that I’d look to come back in the future to renew, but hoping they wouldn’t stop me from leaving! 😓

I would think immigration would realise and know the situation and like I said you're not the only one who's in this situation.
My other friends have said exactly the same thing as they're going over to HK in order to keep their PR and said it's more than a challenge to book an appointment to have their HKID replaced.
Therefore, I don't think you need to worry about it too much.

Great, thanks! Hoping to hear from your friends or others who have made the journey and were able to leave Hong Kong outside of the 30 days even though they could not renew their ID card. Thanks again!

How did your relative's case go? I'm also planning to fly in my parents - they recently received residency but haven't been to HK yet.

I'd email immigration if I was you just to make sure if they can give you any advice in your situation as I think if you're in HK for more than 30 days, then you will be fined.
But any days less than 30 then it's the opposite.
According to HK Government, you won't be violating any laws if you was in HK for less than 30 days, which doesn't help your case.
