I'm not sure I understand why Hong Kong...if I was a nurse, I'd probably go to New Zealand...

It sounds like you have a very good handle on things, I think if you can get an offer from a university, it would be an interesting career move and Stanley is a nice place to live if the position is at HKU. It would not be so good if it was Chinese U or HKUST. You are well educated and I think that finding work back in either Canada or the US(or even Australia or NZ) if it didn't work out the way you wanted would not be difficult. I think you should also consider Sydney or Melbourne. They are both fantastic places to live, very multicultural and reasonably handy to your family in Sg with several universities. I think you might also have an easier time meeting someone there.

Expat jobs in South Korea are mostly english teachers unless is fluent in Korean, correct me if I am wrong. HK expats' jobs are quite diversified, not limiting to only english teachers. There are quite many Korean Americans working in Seoul.

Singapore is a more multi ethnic society locally and with a lot more foreigners than Hong Kong. And knowing English is good enough, Asian languages isn't really needed.

most nurses (Filipinos, Indians and quite a few kiwis) I know as friends, left Auckland for Brisbane back in 2011/12 for a higher pay, better work environment and career prospects. Aus is much better for medical professionals they say.

For finding the love of your life in combo with your profile, I would recommend Singapore, Australia, Atlanta, Finland, NZ over Hong Kong.
You will enjoy HK for work and the proximity to so many Asian places of interest (e.g. India's heritage, heavy foodporn in Thailand/Malaysia/Singapore/Japan, R&R in Bali, the many gateways to China) a short flight away. It's a dynamic city with great opportunities and it's easy to meet (new) friends.

That said many of my expatriate coworkers and friends left HK mainly for the disappointments they came across in the dating scene (although most of them blame it on air pollution - bs we all know) and in their marriage. Any ways, it's best to experience it yourself and who knows...You might run into him on a plane somewhere!

As an American living in HK, I strongly recommend you just move to New York City.
