I felt like saying the same thing, but I think you need to leave a little time for those people who have no idea what they are doing; who are flying with an airline they have no status with and thus have to stand in the long economy queue etc etc .... but 2.5 hours is ridiculous. 1.5 is fine for the slowest queue in HK!
Finnair can sometimes work out cheaper. The other thing which may be worth considering is splitting the ticket with a stopover somewhere else in Europe to limit your APD to a short haul ticket rather than long haul.
Except on public holidays, HK is one of the least hassle airports I know. Check in in town 1.5 hrs before (so 7am), then you've got rid of your bags and a quick journey to the airport, easy.
