    CN Square
The most extensive and biggest stationery store in HK.
The one in Yau Ma Tei is on several floors.
The one in North Point is on one big floor.
Apparently there's a new one in Tsuen Wan too.

It's been there for quite a while in Tsuen Wan, it's on Sha Tsui road by Ham Tim street, it's on several floors too.

I would say they cover any stationery needs but usually the mom and pop shops do for the basic stuff. CNSquare is if you are into art and look for specific stuff.
