YHKCC teaching style? Other school suggestions for Expat?

My daughter grows in the US, is not proficient in Chinese and it seems like YHKCC is an affordable choice for us. I am wondering how is the teaching style there? I grew up in Hong Kong and am trying to avoid the rote memorization learning style for her. When I was in secondary school in HK, for most classes, the teachers just came in to lecture, then leave, then another teacher came in. I want her to be able to develop her critical thinking skills. Our eventual goal would be for her to attend university in Canada. We are non-Christians. Would that be an issue?

What would be other good options? She will be entering 7th grade when we move in a couple years. We are going to rent and open to moving pretty much anywhere. Hopefully, we can get a 3 bedroom apartment for under 40,000 HKD monthly. My son will be in 3rd grade and I am open for him to attend local school for until Secondary so he can pick up more Cantonese, then hopefully he can join his sister in the same school.

Also looking at Concordia, AIS, and English foundation schools. Which one tend to have shorter waitlist for Foreign Passport Holders entering 7th grade? And what are the teaching styles in those schools?
