Well budget doesn't really matter.

I like to try new things so i plan to visit all the places that people recommend here

Well I guess if you go to the Mandarin Grill they'll do you a good one.

Or Jaspa's for about a third of the price.

The Lounge in the Four Seasons does a decent one, in two sizes. The larger one is pretty hearty and around 200HKD.

A while back I had a pretty sensational one at Roubechon, but I don't think it is a regular menu item.

That said, a Nicoise is pretty easy to put together and you can easily buy good ingredients at Great/CitySuper to put one together yourself that would compare more than favourably with a lot of expensive to mid range places.
