I ate Monjayaki only once in my friend's house many years ago.
She was from eastern area of Japan.
Monjayaki is normally eaten in Kanto area (around Tokyo).
I found its receipe printed on the Okonomiyaki package.
Ingredients are similar but the ratio between flour and water is totally different from Okonomiyaki.
Monjayaki needs more water against only small potion of flour so that it seems more liquid than okonomiyaki. And monja doesn't need eggs.
We wait for several minutes until okonomiyaki cooked well, on the other hand, we can eat monja very quickly when the ingredients are just cooked.
We put Okonomiyaki sauce on it but Worcestershire sauce is mixed with flour and other ingredients.
*Worcestershire sauce = usuta sauce in Japanese
I have never seen monjayaki at any Japaneses restaurants in HK.
